How to make a light Galician empanada for Easter?

Galician Pie Recipe for Easter
Ingredients for 8 servings
- Calories per serving: 280
- Light dough ingredients
- 250 gr. Flour
- 2 tablespoons cold water
- 1 teaspoon of salt
- 3 tablespoons olive oil
- Vegetable spray
Filling ingredients
- 2 peppers
- 2 large ripe tomatoes
- 500 gr. onion
- 1 can of tuna raw
- 1 can of mackerel naturally
- 1 egg
- Garlic, bay leaf and paprika
Dough preparation
- Place flour, salt, water and oil in a food processor
- If necessary add a little more water
- Dividing the dough, stretch very thin and place in two pie pans, one of them previously oiled
- Reserve in refrigerator for 2 hours
Preparation of filler
- Sprinkle pan with vegetable oil
- Chop the onion, garlic, chili and tomatoes
- Fry these foods, less tomato
- Once the onions are translucent add the tomatoes, mackerel, tuna, paprika and bay leaf
- Let it cook until you remove some of the liquid they exude these foods
- Once the egg is ready (you can add beaten or hard, depending on your preference).
Remove the dough from the refrigerator. Dump the filling on one of the covers and the other you cover the filling. Close and you can paint it with milk or beaten egg.
